Coconut/Oat Clusters!

These little tasty treats are SO simple to make!  And no baking!  Yay!

  • 1/4c of nut butter (we used organic peanut butter)
  • 1/4c of unsweetened coconut (we use ‘Let’s Do….Organic’)
  • 1/4c of soy milk
  • 1/4c of dark chocolate chips (or any dark will work)
  • 1tbsp of dark cocoa powder (we use camino)

Melt all of the above in a pot on low heat – just until the chocolate has melted.

Then, stir in one heaping cup of oats (we use gf oats) and one tablespoon of seeds (chia, hemp or flax) … stir everything together until blended.

Using a soup spoon (or something similar), scoop out some of the mixture and place on a plate… you should get 10-12 ‘cookies’ with this recipe.

Place them in the fridge for about an hour – or in the freezer if you can’t wait.  🙂

If you manage to stop yourself from eating them all you’ll want to keep them stored in the fridge.
