Raw Chocolate Tart!

Chocolate Tart

It’s be soooo long since I have posted on here… no excuse.

Hopefully this makes up for it.  🙂

There aren’t a whole lot of words to describe how wonderful this is.

Very simple, nutritious ingredients and you have yourself one decadent dessert.

For the crust…

1c of pecans
1/2c (or 10) soaked, pitted dates
1/2c of raw cacao powder
1tbsp of coconut oil
a pinch of ground clove

Process in your food processor until well combined and press into the bottom of a parchment lined eight inch tart pan.

For the filling…

1 can of coconut milk – solid part only
1/2c of coconut oil
1/2c of raw cacao powder
1tbsp of coconut nectar
a pinch of ground cloves

Process in your food process until smooth and creamy and then pour over top of the base.

Place it into the freezer for thirty minutes and voila!

Decorate with cacao nibs, coconut flakes or the fruit of your choice.

I got twenty pieces out of this one. Be sure to store in the fridge.


Healthy Mocha

Into your Vitamix…

  • 2tbsp of raw almonds
  • 1tbsp of cacao powder
  • 1tbsp of dandy blend (an herbal coffee alternative)
  • 1tsp of maca powder
  • 2 dates
  • a pinch (or a drizzle) of vanilla
  • 1c of water

Process until slightly warm, pour into your favorite glass, sit back and enjoy!

It’s SO good.

The dates add just a hint of sweetness and the cacao mixed with the dandy blend…

Sweet Heart

I told my four year old that we’d be celebrating Valentine’s Day pretty much all week… happy babe!

This is such a fun and simple dessert to make – and I think it’s kinda impressive.  🙂

Take the ‘So Delicious’ ice cream of your choice out of the freezer for about five minutes, just long enough that it softens slightly.

Place the ice cream into a square or rectangle pyrex dish lined with parchment paper and flatten down with the back of a spoon… you want the ice cream to be about an inch or so thick.

Return the ice cream to the freezer for thirty minutes… ish.

Remove from the freezer and lift the goodness out of the pyrex – easy with the parchment paper!

This time we made the heart freehand… but a cookie cutter would be great too!

Decorate your plate with a few berries or a few dark chocolate hearts… be creative!  🙂

Chocolate Pudding

You absolutely must try this fabulous treat!

I’m not trying to be bossy, but seriously you gotta try it!

In your food processor…

  • 1 avocado
  • 1 mango
  • 3-4 tbsp of raw cacao powder

Whiz away and voila!


The above serves two (if you’re lucky) … easy enough to double or triple!
