Banana Date Bars

Raw Banana Flakes – where have you been all my life??

If you haven’t tried ‘Raw Banana Flakes’ yet, you are in for a treat!

These bars would make for a great breakfast on the go or a quick energy snack mid-afternoon.

What you’ll need…

  • 1/4c of coconut oil
  • 1/4c of banana flakes
  • 1/4c of chia seeds
  • 1/4c of pumpkin seeds
  • 1/2c of coconut flakes
  • 1c of pitted dates

Place all of the above in the food processor and zip for about a minute.

Line a loaf pan with parchment paper and press the mixture down tightly.

Toss it in the freezer for a couple of hours before slicing into bar like pieces.

One whole bar can definitely be shared!  🙂

We recommend storing these in the freezer… they’re a little on the sticky side, but oh so good!

Coconut Milk Shake

When we started this, we had the intention of it turning into ice cream… not this time.


It ended up being a fantastic ‘milk’ shake!

Absolutely delicious and a great, healthy dessert!

Because it’s not an ice cream recipe you don’t necessarily need to use your vitamix… a blender would work too.

What we used…

  • 1 can of organic coconut milk
  • 4-5c of juice cubes (we used ‘Happy Planet’s’ Organic Coconut Water & Mango Juice)
  • 1tbsp of agave

Whiz away until it’s the consistency of a milk shake… pour into your favorite glass and enjoy!

We really need to get ourselves a few of these fantastic straws!

Today’s Smoothie

This is a good one!

A beautiful friend of ours brought us a bouquet of herbs yesterday from her garden… love.

I wanted to make sure that I started adding them to our recipes today so that I actually use them, rather than admiring them while they’re decorating our table.  🙂

Here what we used today and it made just over three cups…

  • 1 cucumber
  • 1 banana
  • 2 (peeled) grapefruits
  • 8 large mint leaves
  • 1c of water

Place all of the above into your vitamix or blender and whiz away until smooth.

Grapefruit and mint are lovely together!

We first tried this without the banana, but it needed a bit of something sweet to sell it to my five year old.  🙂

You could also leave out the banana and add in an avocado!  YUM!

Yam, Kale & Quinoa Baked Burritos

I have been craving Mexican flavours for weeks!

We were experimenting today for guests and we were so happy that it all turned out the way it did!


For the inside…

  • 1 onion
  • 4 cloves (or eight) of garlic
  • 1 large yam/sweet potato (the orange one)
  • 1 yellow pepper (ok, doesn’t have to be yellow)
  • 1 cup of kale
  • 3 tomatoes (today we used one red, one orange and one yellow)
  • 1c of cooked quinoa
  • 1tbsp of coconut oil
  • 1tbsp of cumin seeds
  • 1tsp of smoked paprika

Chop all of the veggies… similar in size.

Place the oil, onion, garlic, yam, pepper, smoked paprika and cumin seeds into a pan and let them sizzle for about ten minutes.

Add in the kale, tomatoes and quinoa and let those dance for another ten minutes.

You could add in a few black beans too!

Remove from the heat and set aside until coolish.

Once it has cooled, place about half a cup in the centre of a brown rice tortilla shell… or an organic whole wheat shell.

Fold the edge closest to you over the filling and tuck it in nice and tight.  Tuck in the ends and finish the roll up.

Place into a baking dish with this following in the bottom…

  • 1c of tomato sauce
  • 1tsp of ground cumin
  • 1tsp of smoked paprika
  • 1/2tsp paprika
  • 1/2tsp of turmeric

Mix the above together for a great, tasty sauce that your burritos will bathe in.

Top these with some Daiya cheese…choose your flavour… and bake in a moderate (350) oven for about twenty to thirty minutes.

Serve with some homemade salsa and a few avocado slices………………

Chocolate Chia Pudding

Oh so simple.

The following will be enough for four peeps…

  • 1/4c of chia seeds
  • 3/4c of chocolate almond milk (homemade works great!)
  • a drizzle of ‘simply organic’ peppermint oil

Mix those three ingredients in a bowl and give it a good stir… let it sit for a couple of minutes and stir again.

Spoon into four dessert bowls and place in the fridge until you are ready to serve.

So simple and pretty darn good for you!  🙂
