Snack Ideas for Lunch Boxes!

These tasty little bites are full of good for you ingredients and they make a fantastic snack!

Over the next few days we’ll re-post a few things that could be a great addition to most lunch boxes.  🙂

In a food processor…

  • 1c of pitted dates
  • 1/4c of walnuts
  • 1/4c of each hemp, flax and pumpkin seeds
  • 1/4c (heaping) of peanut (or any other) butter

Process all of the above until well combined.

Remove blade from your processor and shape mixture into one inch balls.

Roll these beauties in a little bit of Let’s Do…Organic unsweetened shredded coconut and… enjoy!

    These are delicious! The little people in my daycare saw me rolling them in the coconut and exclaimed “They have sprinkles!” Who am I to correct them? They love these “cookies”. Thanks for another great recipe 🙂
