Raw Date Squares!

Date Bars

OMGoodness, I simply must give these away to the neighbors before they are devoured.

Yep, they’re that good.

For the crust & topping…

1c of unsweetened, shredded coconut
1/2c (plus 1/4c for after processing) of GF oats
1/2c of pecans or walnuts
1/4c of soaked, pitted dates
1/4c of coconut oil

Process all of the above in your food processor, except for the extra quarter cup of oats…once everything is well combined, transfer the mixture to a bowl and stir in the remaining oats.

Take half of that mixture and press it into a parchment lined loaf pan.

For the date filling…

1c of soaked dates
1 heaping tablespoon of coconut oil

Strain the soaked dates to remove all of the excess liquid…no need to squeeze them though.

Place them into your food processor with the coconut oil and process until smooth.

Spread over the top of your crust and then cover with the remaining coconut/oat mixture.

Press firmly so that it all comes together and place in the fridge for at least four hours.

Absolutely delish!

Cranberry Peppermint Fudge

This just might be my new favorite!

Into your food processor….

  • 2c of unsweetened, shredded coconut
  • 1/4c of dried, unsweetened cranberries
  • 1/4c of melted cacao butter
  • 2tbsp of coconut oil
  • 1tbsp of honey or coconut nectar
  • a couple of drops of pure peppermint oil

Process all of the above until well combined and very creamy.

Pour the mixture into a parchment lined loaf pan and place it in the freezer for about thirty minutes.

Remove and slice into bite size squares.

Store in the fridge and enjoy!

Banana Blast!

Here’s our raw version of a summer treat we’ve all had once or twice before.

There are no words to describe how delicious this one is…my six year old and I just devoured it!

For the ‘ice cream’…

2 bananas
1/4c (maybe a titch more) of homemade almond milk
a pinch of vanilla powder

Slice your bananas and place them in the freezer for at least four hours. Once they are frozen, place them into your processor. Start processing and add in your milk and vanilla. Process until smooth and creamy.

Now of course this ‘ice cream’ is absolutely fabulous all on its own, but his time we decided to fancy it up and added in some raw, dark, chocolate and our favorite peanut butter cups… all chopped up into bite size pieces of course.

Banana Pistachio Cardamom Ice Cream!

Seriously delicious.

All you need for two…

  • 2 large bananas
  • 6tbsp of homemade almond milk
  • 1tbsp of agave or the sweetener of your choice
  • 1tbsp of raw pistachios
  • a pinch of ground cardamom

Slice your bananas and place them into the freezer for at least four hours…today we left ours for eight.

Once they are frozen, place them into the food processor with the remainder of the ingredients and process until smooth.

Serve right away or store in the freezer.

Top with a few pistachios and enjoy!

Icicle Squares

Icicle Squares!

OK…this was supposed to be raw fudge.

I think we may have stumbled onto something though!

Tell me you remember ‘icy squares’? I remember having them over the holidays when I was a child and loving them. This little concoction is very similar in texture to an icy square! It would be even more so if you omitted the pecans, but those are good for you so leave ’em in there.

Our recipe is not 100% raw, but you can easily replace the one ingredient to make it so.

Place half a cup of cacao powder, half a cup of coconut oil, half a cup of raw pecans and two tablespoons of coconut nectar or maple syrup into your food processor and process until smooth… almost like a pudding.

Line a small, individual sized loaf pan with parchment and fill it with the decadent mixture… save a little bit for you to ‘test’ with a spoon.

Place it into the freezer just until it hardens…maybe thirty minutes.

Slice in smallish pieces and store them in the freezer.

Enjoy!
