Vegan Carrot Muffins

Our baking frenzy has somewhat slowed down this past week… I think I’m going through withdrawal.  🙂

These are great little muffins to have on hand for your kids to take in the car, for an after school snack or you could even add a little coconut cream icing to them and have a tea party!

  • 1.5c of spelt flour
  • 1/2c of coconut sugar
  • 1tsp of baking soda
  • 1tsp of baking powder
  • 1 large carrot, grated
  • 1tbsp of apple cider vinegar
  • 5tbsp of melted coconut oil
  • 1c of room temperature water

Mix all of the ingredients together.

Place one tablespoon of the mixture into mini muffin cups and bake in a 325 degree oven for about twenty minutes.

You should get twenty four mini muffins or twelve regular sized muffins.

So simple.
