Strawberry Coconut Truffles

Simple and de-lish!

What you’ll need…

  • 1c of unsweetened coconut
  • 2tbsp of coconut oil
  • 4 fresh, organic strawberries
  • 1tbsp of coconut nectar

Process all of the above in your food processor until well combined.

Remove the blade from the processor and roll into smallish balls.

Place them into the freezer for about fifteen minutes.

While they’re in there, make your chocolate…

  • 1tbsp of coconut oil
  • 1tbsp of raw cacao powder

Melt your coconut oil in a stainless steel bowl over a pot of warm water… then add in your cacao powder.

Whisk until smooth and set aside for about five minutes.

Remove the strawberry goodness from the freezer.

Once the chocolate has slightly cooled and thickened just a little bit, roll each ball in and around the chocolate until completely covered.  Place them onto a piece of parchment paper and let the chocolate hardened just a bit… shouldn’t take long because the coconut deliciousness has been in the freezer.   🙂
