Yam Fudge

Fudge

Simple.  Healthy.  Delicious.

Now I know when you see the word fudge you might think lots of sugar…

Not this one!  🙂

What you’ll need…

  • 1/2c of lightly steamed yam/sweet potato (the orange one)
  • 1/2c of lucuma powder
  • 1/2c of raw sunflower seed butter (any nut or seed butter should work)
  • 1/2c of organic coconut oil (we use Maison Orphee)
  • 1/4c of coconut nectar or agave or brown rice syrup

In a vitamix or a blender or a food processor, mix all of the above until smooth.

Line a small pan with parchment… work the goodness into the pan and smooth out the top, sprinkle a bit of pink himalayan salt over the top and place in the freezer for about an hour.

Remove your fudge from the freezer and slice it with a sharp, warm, dry knife if you want straight, clean edges… but you could always just bite off a piece if you’re not too picky.  🙂

Store the pieces in the fridge or the freezer (that’s where we keep ours) and sharing is always a good thing!
