Carob Seed Nuggets

We’ve been working on this one for a while.

One of the health food stores that we frequently visit carries ‘energy nuggets’ that we love to purchase when we’re there… I’ve been wanting to create our own version and this is what we came up with.   🙂

A perfect little afternoon pick me up snack and they’re so good!

What you’ll need…

  • 1/4c of peanut butter (almond would work too)
  • 6tbsp of brown rice syrup (we use Lundberg’s)
  • 1tbsp of blackstrap molasses
  • 1/2c of carob powder
  • 1/2c of flax seeds
  • 1/4c of hemp seeds
  • 1/4c of chopped almonds

Heat the pb, syrup and molasses in a pot over low heat.  Once that is combined and nice and smooth, add in the carob powder.

Mix well… until the carob powder dissolves.

Add the stickiness to your nuts and seeds and squish it all together.  I found that my hands did the best squishing.  🙂

Press the mixture into a parchment lined loaf pan… or something similar in size.  To get a super smooth top, wet your fingers just a little bit… that way they won’t stick to the goodness while you’re pressing it into your pan.

Place in the fridge for a couple of hours before you slice…

We recommend that you keep them in the fridge and recipe can easily be doubled.

Cut them into little ‘nuggets’ and enjoy!
