Veggie Mac

This is our dairy and gluten free veggie mac.  🙂

So simple and so good…and if you need to ‘hide’ some veggies, this is a great option.

In one pot, boil enough water for one cup of dry organic corn macaroni noodles.

Once they’re cooked, drain the water and let them hang out in the pot until the sauce is ready.

In another pot, place a half a cup of each yam, sweet potato, zucchini and cauliflower in enough water to steam the medley.

Steam the veggies until very tender and then add in approximately half a cup of homemade almond milk and a quarter cup of red star nutritional yeast.

Blend all ingredients with a hand blender until creamy then pour the sauce into the noodles.

Give it a good stir and heat through.

A little S&P to taste… maybe a little extra nutritional yeast sprinkled on top… a few slices of tomato or avocado… and you are done.

Or you could make it ahead and warm it up in the oven!
