Chocolate Mousse

Absolutely delish!

My mom made this dessert  about a year ago that was incredible… she told me there were two ingredients and what they were… this is our version without having the actual recipe.  🙂

What you’ll need for two people…

  • 1 can of full fat organic coconut milk (we use Native Forest)
  • 30 – 50g of really dark chocolate (one third to one half of a 100g camino bar – depending on how chocolatey you want it)

First, give your can of coconut milk a gentle shake… you want to hear no movement whatsoever.  If you do, place the can into the fridge for about an hour or so.  You want the coconut cream to separate from the coconut water.

Open the can and scoop out the cream… put it into a bowl.

Melt your beautiful dark chocolate in a stainless steel bowl over a pot of simmering water.

Once it is fully melted…remove and let it cool slightly.

Whisk the chocolate into the coconut cream and mix until it’s all incorporated.

Spoon the goodness into the serving dishes of your choice and place them into the fridge for at least thirty minutes.

This dessert is so simple and it will absolutely wow a guest or two… it did me!  🙂
