Tofu & Broccoli

I know a few peeps that would devour this one… and this one is all about the sauce!  🙂

Our version is below – I hope you enjoy it!!

I usually mix the sauce and let it sit overnight (or longer), but it’s not necessary.  🙂

Whisk together in a pot over low heat…

  • 1/4c peanut butter
  • 1/4c apple cider vinegar
  • 3/4c water
  • 3tbsp of ‘Wholesome Sweeteners’ organic blackstrap molasses
  • 1tbsp braggs
  • 1tbsp of ‘Truly Organic Foods’ mesquite powder
  • 1tsp freshly grated ginger
  • 2 cloves crushed garlic
  • juice of half a lemon

Once all that goodness has warmed just enough for everything to join as one, add in a half a cup of organic tofu (cubed) and one heaping cup of broccoli.  Cover and let it bathe together on low to medium heat just until the broccoli it almost cooked through.

Serve over a handful of fresh, crisp spinach, a little bit of brown rice or all on its own.

Maybe add a sprinkle of toasted sesame seeds, or the seeds of your choice on top and it’s time to eat!  🙂

Trust me, you’ll want to drink the sauce – YUM!
