Easter Basket Cupcakes

It’s absolutely pouring today.

Great day to get creative in the kitchen… we think!

This is our first attempt at these cute little baskets so they’re not quite as ‘perfect’ as I would like them to be… but we thought that we would share with you anyway.  It’s about the idea!  🙂

Use your favorite vegan cupcake.

Make your vegan icing:

  • 3tbsp of ‘Earth Balance’
  • 2c of ‘Wholesome Sweeteners’ organic icing sugar
  • 1tbsp of ‘Camino’ dark cocoa powder
  • 3tbsp of ‘SO Delicious’ coconut milk

Make your coconut mixture…for the nest:

  • 1/2c of ‘Let’s Do… Organic’ unsweetened coconut
  • 1tsp of ‘Camino’ dark cocoa powder

Spread a thin layer of icing on the cupcake and then dunk it in the coconut mixture.

I’m not a big fan of jelly beans, but they look super cute.

Melt some ‘Camino’ dark chocolate and use a piping bag to make the handles.

Place them in the freezer for about fifteen minutes… much easier to work with!  🙂

And there you have it… cute little Easter basket cupcakes!
