Vegan Brownies

We’ll keep playing with this a little bit to make it ‘perfect’, but how great is it when an experiment turns out!  🙂

Vegan AND gluten free – yay!

What you’ll need…

  • 1.5c of all purpose gf flour
  • 1/2c of ground hazelnuts
  • 1/2c of coconut sugar
  • 1/4c of ‘Camino’ dark cocoa powder
  • 1/2tsp of baking soda
  • 2 chia ‘eggs’ (2tbsp of chia seeds – soak in 1/4c of water)
  • 1tbsp of apple cider vinegar
  • 1tsp of ‘Simply Organic’ vanilla
  • 1/2tsp of ‘Simply Organic’ peppermint flavour
  • 1/4c of ‘So Delicious’ coconut milk
  • 1  100g ‘Green & Black’s’ dark chocolate bar
  • 1/4c of ‘Earth Balance’ coconut spread

Mix all of the dry ingredients together.

Add in the remainder of the ingredients, except for the chocolate and the earth balance.

Break up the remainder of the chocolate bar (after you’ve nibbled) and place it in a stainless steel bowl over a pot of simmering water.

Once the chocolate has almost melted, add in the earth balance and stir about until both have completely melted.

Pour the goodness over the rest of the ingredients and give it a good stir.

Place the batter in a parchment lined 8×8 pan and bake in a moderate (350) oven for 28 minutes… maybe 30.  🙂
