Vegan Vanilla Cupcakes

These are so simple to make and you will likely have all of the ingredients on hand!


What you’ll need…

  • 3c of unbleached, organic white flour
  • 1.5c of coconut (or brown) sugar
  • 1tsp of baking soda
  • 2tsp of baking powder
  • 1tsp of sea salt
  • 1tbsp of good vanilla (we use raw vanilla bean powder – yum!)
  • 2tbsp of apple cider vinegar
  • 1/2c of oil (grapeseed, sunflower or coconut work well)
  • 2c of room temperature water

Mix all of the above ingredients together.

Using two cupcake pans, fill your cupcake cups half full and bake for eighteen to twenty minutes in a moderate (350 degree) oven.

Remove and cool completely before icing!

For our vegan icing…

  • 1/4 of earth balance
  • 2c of organic icing sugar
  • 2tbsp of non-dairy milk
  • a drizzle of vanilla

With a mixer (or your kitchenaid), cream the earth balance and slowly add in your icing sugar … the milk is used mostly to thin it out so adjust as needed … it’s always an easy fix!  If it’s too runny, add in more icing sugar – if it’s too thick, add a bit more milk!  🙂

Perfect for any occasion.  We often use twelve and freeze the other twelve… just to have on hand.
