Oat Bars

Here’s our first attempt at ‘granola’ bars.  🙂

Dry ingredients…

  • 2c of (GF) oats
  • 1/2c of dried cranberries
  • 1/4c of sunflower seeds
  • 1/4c of flax seeds
  • 1/4c of hemp seeds

Mix all of the dry ingredients together in a bowl and set aside.

Wet ingredients…

  • 1/2c of ‘So Delicious’ coconut milk
  • 1/2c of organic peanut butter
  • 1/4c of maple syrup
  • a splash of vanilla

Place all of the wet ingredients in a pot over low heat.  Heat just until the peanut butter has melted.

Pour the warm mixture over the dry ingredients and stir until well combined.

Add in one tablespoon of coconut oil and mix again… fingers are your best kitchen tool.  🙂

Now, here’s how we did it…

We pressed the oat mixture firmly into a parchment lined loaf pan.

We baked it in a moderate oven for thirty minutes… removed and cooled completely.

We placed them in the freezer just long enough that we could easily slice them into one inch (or so) pieces and then placed them on a cookie sheet.

Back into the oven for thirty minutes at a lower temperature… about 250.

And there you have it… round one is done!  🙂
