Here’s the first step to our version of a vegan/gf tiramisu…  🙂

Into the food processor…

  • 1.5c of all purpose GF flour
  • 1/4c of coconut sugar (lower glycemic index)
  • 1.5tsp of baking powder
  • 3tbsp of solid coconut oil

Mix these ingredients together for about fifteen seconds and then add in:

  • 1/3c of ‘So Delicious’ unsweetened coconut milk
  • 1/3c of warm water
  • a generous splash of vanilla

Pour the mixture into a parchment lined loaf pan and bake in a moderate oven (350) for approximately fifteen minutes.

Remove from the oven and cool completely.

Once the loaf has cooled, sliced the ‘cake’ into one inch pieces.  Line them up on a cookie sheet and bake in the oven for another twenty to thirty minutes… you want them to sort of resemble biscotti.  🙂

Cool and set aside until you are ready to assemble your tiramisu.
