Vegan French Toast

Sunday morning brunch?

What about vegan french toast covered in oats, coconut and a bit of dark cocoa powder, with hint of orange?

Hmmm…

You’ll want two plates – one for a wet mixture and one for a dry mixture.

For the wet mixture…

  • 1c of ‘So Delicious’ coconut milk
  • 1 chia ‘egg’ (1tbsp of seeds and 3tbsp of water – give it a few minutes to ‘set’)
  • 1tbsp of good vanilla
  • 1tbsp of orange zest

Then, in the plate right next door…

  • 1c of oats
  • 1/2c of ‘Let’s Do…Organic’ unsweetened coconut
  • 1 heaping tablespoon of ‘Camino’ dark cocoa powder

Dunk the bread into the wet mixture first and then pat the bread down (both sides) in the dry mixture.

Cook both sides for three or four minutes on medium heat in a little bit of coconut oil … and breakfast is served!

Sprinkle a few carob chips on top (for the kids of course!) and a little drizzle of maple syrup … happy kids with happy tummies!  🙂
