Vegan Corn Chowder

Vegan Corn Chowder

SO simple… and makes for a great Thursday night dinner.  🙂

This is absolutely, hands down one of my very favorites.

Melt one tablespoon of coconut oil in a large pot on medium heat and add one diced onion and a clove or two of garlic.

Cook the onion for about five minutes and then add two diced yams (the orange ones) and one diced red pepper.

Cook these for another ten minutes and then add one cup of fresh or frozen organic corn.

Cook for another five minutes and remove the pot from the heat.

Pour in two cups of unsweetened , non-dairy milk and return the pot to low heat until ready to serve.

Just before you serve, add in a good handful of chopped cilantro and a little S&P to taste and you are done! 

This will serve two or three people as a main – recipe can easily be doubled.

I usually serve this with a little piece of GF corn bread… YUM!
