Quinoa Pudding

Oh my.

Seriously.  SO good!  And a nice little change from rice pudding.  🙂

Soak one cup of quinoa for a couple of hours if you can.

Steam and mash one yam.

Into a pot place the soaked quinoa and the yam (with the left over steaming water – not that there should be a lot).

Pour in one cup of ‘So Delicious’ coconut milk.

Add a pinch of cardamon, clove, cinnamon and turmeric… and a splash of vanilla.

YUM!

Cook on medium heat, stirring often, until the quinoa is cooked.

This should make just enough for four servings.

Top with a dollop of ‘So Delicious’ coconut yogurt (choose your flavour) or a drizzle of maple syrup and an extra pinch of cinnamon.

Dessert is served!  And it’s SO good for you!
