Mushroom Medley

Breakfast, lunch or dinner!

We had a variety of mushrooms begging to be loved and this is so simple.  Portobello, shiitake and buttons!  Yum!

I remember my mom would saute a pan of mushrooms and enjoy them over a piece of toast when i was young(er).

Saute a whole bunch of these beauties (that are so good for you btw) in a little bit of good olive oil.

Add in a green onion or two… cook it all until the mushrooms are tender and juicy.

Squash a bit of avocado onto a piece of yummy, seedy bread and top with the mushroom and a few more green onions.

A dash of S&P and voila!

My new favorite breakfast!  🙂
