Vegan Chocolate Pudding Cake

So exciting that this turned out on the first go!  🙂

This is a great little dessert to share with your most favorite person… I just did!

This recipe is enough for two ramekins… great for four people!

What you’ll need…

  • 1/2c of unbleached organic flour
  • 3tbsp of really good cocoa powder
  • 1/2tsp of baking powder
  • a pinch of sea salt
  • 1 chia egg (soak 1tbsp of chia seeds in 3tbsp of water)
  • 6tbsp of coconut sugar (regular sugar works too)
  • 6tbsp of ‘So Delicious’ coconut milk

Mix all of the above in a bowl… please don’t go crazy.  🙂

Distribute the batter evenly into two ramekins.

Mix together…

  • 2tbsp of really good cocoa powder
  • 2tbsp of brown sugar
  • 2tbsp of hot water

Carefully drizzle the liquid over top of the batter (do not mix) and place the ramekins in a moderate (350ish) oven for 15-20 minutes.

Serve these little bowls of scrumptious with a scoop of ‘So Delicious’ coconut ice cream and inhale… I mean enjoy!  🙂
