PB & Avocado Chocolate Squares!

This one might be for the big kids.  🙂

What you’ll need…

PB layer:

  • 1c of organic peanut butter
  • 1c of brown rice puffs (we use nature’s path)
  • 1/2c of quinoa flakes
  • 1tbsp of coconut oil
  • 1tbsp of agave
  • 1tbsp of flax seeds

Chocolate layer:

  • 1 avocado
  • 1/2c of cocoa powder (we use green & black’s)
  • another tbsp of agave

Put all of the PB layer ingredients (except the flax seeds) into a food processor and whiz away until smooth.

Using a rectangular pyrex dish lined with parchment (we use a pyrex dish because it has a lid, but you could use a loaf pan) press the  PB mixture into the dish, sprinkle the flax seeds on top and place into the freezer.

Add the chocolate layer ingredients into the food processor and again, whiz away.

Spread the chocolate over the PB layer and back into the freezer we go.

About thirty minutes and you have a beautiful, healthy little snack… more like a treat!

Sprinkle a few rice puffs over the top and enjoy!

We keep ours in the freezer and when we ‘need’ one, we slice off a piece and let it sit for about ten minutes before devouring.  🙂
