Tofu Scramble Wrap

OK, here’s your five minute, meatless Monday meal.

We don’t eat tofu very often, but we definitely enjoy it when we do.

It picks up any flavor that you cook with, making it a simple alternative for just about any recipe.


Melt a little bit of coconut oil in a pan on medium heat.

Add in:

  • 2 finely chopped green onions
  • 1 diced tomato
  • a generous pinch of chopped parsley or cilantro
  • a dash of turmeric, salt and pepper

Let these sizzle for two minutes and then add in one 175g package of organic firm tofu, crumbled.

Heat through.

Using two wraps of your choice, mash one third of an avocado in the center of each wrap. Divide the mixture in half, place it on top of the avocado and roll it up nice and snug.

Serve with a few avocado slices on the side…
