Vegan Pancakes

SO, SO simple!

Mix together…

  • 1/2c plus 2 tbsp of all purpose gf flour (we use Bob’s)
  • 1/2tsp of baking powder
  • 1tbsp of chia seeds
  • 1 mashed banana
  • 6tbsp of ‘So Delicious’ coconut milk
  • the juice of one orange
  • 1tsp of orange zest (optional)
  • a pinch of nutmeg, clove or cinnamon – or all of them!

YUM!

Coconut, banana and orange… such a great combo!!!

Melt some coconut oil in a pan on medium heat and pour your batter in … in whatever shape or size you like.

Maybe four or five minutes a side?

We only add a bit of maple syrup to the pancakes… the coconut is present and makes them taste so good!

Enough here for two small people and a bit leftover for mom!  🙂
