Pumpkin Quinoa Cakes

These beauties are so simple to make and they’re great as an appy or on top of a crisp green salad.

What you’ll need…

  • 1 can of organic pumpkin
  • 2c cooked (& cooled) quinoa
  • 1/2 a lemon (zest and juice)
  • chives
  • 1 chia egg (1tbsp of chia seeds and 3tbsp of water – soak 10 min)
  • 1/4c of gf flour

Turn your oven onto a moderate temperature… 350 will do.

Mix pumpkin and quinoa together in a bowl.

Add in the remainder of the ingredients and mix until it’s all combined.

Shape the mixture in one inch balls and then flatten slightly with both hands.

Place your cakes on a parchment lined cookie sheet and bake for approximately 20 minutes – flipping once halfway through.

The outside of the cake should be crisp.

To make them look pretty, top them with a little dollop of ‘So Delicious’ plain almond milk yogurt, a tiny pinch of lemon zest and a small piece of of chive… picture worthy!  🙂
