Soy Nog Brown Rice Pudding!

Here it is!  🙂

What you’ll need…

  • 1c of organic brown rice
  • 3-4c of soy nog (we use vitasoy and it’s SO yummy!)

  • 1/2c of organic dried cranberries
  • 1tsp of freshly ground cinnamon (yum!)
  • 1/2tsp of freshly ground cloves (that deserves another another yum!)

Now, this does take a little while to cook… but it’s SO worth it!  🙂

Rise (and soak if you have time) your brown rice and put it in a pot with three cups of soy nog.

Bring this to a low boil… on medium to high heat.  It’ll depend on your pot and your element!

Keep stirring!

Once it comes to a boil, turn the heat down to low to medium heat and add in the cranberries, cinnamon and cloves.  Do not cover….. no lid required.

Keep stirring!  🙂

You will know if you need to add more soy nog… if the liquid is completely absorbed and the rice is not cooked, add in more nog a little at a time.

It doesn’t cook any faster if you stare at it… we’ve tried.  🙂

Serve with a little sprinkle of cinnamon and enjoy!
