Colourful Potato Soup…

It’s clean out the fridge day today!  🙂

Melt one tablespoon of coconut oil in a large pot and add the following chopped veggies…

  • 1 onion
  • 1 leek
  • 6 mushrooms
  • the tops of the celery….you know the part with the leaves?  🙂

Let these sizzle on medium heat for about five minutes and then add in…

  • a dash of S&P
  • 1 tbsp of tumeric
  • 1tbsp of fresh rosemary
  • 1 tbsp of fresh sage

  • 2 purple potatoes
  • 2 small sweet potatoes
  • 2 small yams

Put enough water in the pot to steam the veggies… cover and let them bathe for about fifteen minutes.

Once all of the potatoes are soft, add another 3 cups of water… cover the pot once again and turn off the heat.

Using your hand held blender/smart stick, puree the delicious goodness and enjoy!
