A Little Millet & Greens Soup…

I love how easy a healthy pot of soup is to make… 🙂

We chopped up…

  • 1 small leek
  • 4 chard leaves (right from the garden)
  • 4 pieces of celery
  • a handful of kale
  • a handful of broccoli

Throw all of these into one big soup pot, drizzle a bit of good olive oil over the top and sizzle away on medium heat for about fifteen minutes.

Add in about two or three cups of cooked millet and add enough water to generously cover all of your ingredients.  You could also use quinoa, which will give it the same creamy texture.  Great way to add a little protein to your vegan meal!  🙂

Sprinkle in about a tablespoon of tumeric, a pinch of oregano and a dash of S&P.

Cover and let it simmer for another fifteen minutes.

Using a handblender, puree all together until smooth……………… add in a good palmful of chopped cialntro & parsley, stir and serve!
