Yummy Yam Cake!

Whenever someone has a birthday I’m inspired to bake a cake.  🙂

HAPPY birthday Carmen!

OK.  Yams are SO good for you.  Really.

This is a great way to add a little good for you kind of sweetness and get the benefits of eating this beautiful super food!  Win, win!  :

In your mixer (paddle attachment works best with the kitchenaid) …

  • 1/2c of earth balance
  • 1/4c of organic cane sugar
  • 2 organic local eggs  (we will absolutely try this with flax eggs next time!)
  • 1/2c of steamed and mashed yams
  • 1tsp of baking powder
  • 1tsp baking soda
  • 1tsp of vanilla
  • 1tsp (or more) of ground cinnamon
  • pinch of ground cloves
  • 2c of GF all purpose flour
  • 1/2c of coconut beverage/milk (we use so delicious)

Cream the earth balance and add in the sugar … then add in the eggs and the remainder of the ingredients in the order they are listed above.

Bake in your pan of choice in a 350 degree oven for 30ish minutes and let cool for just a bit before diving in.

For a special treat, we drizzled less than a teaspoon of maple syrup on top and sprinkle a pinch of finely chopped almonds.  🙂
