A Little Brown Sugar Shortbread … 1 of 3

So, this is the first of three desserts we’re going to make with this recipe … oh so fun!  🙂

In a bowl…

  • 1c of butter
  • 1/2c of packed brown sugar
  • 2c of unbleached plain white all purpose flour
  • 1tbsp of corn starch
  • 1tbsp of ground cinnamon
  • 1tbsp of good vanilla

Cream the butter (if you’re using a kitchenaid or something similar, paddle attachment works best) then add in the sugar and blend until combined – creamy and fluffy!   Slowly add in the remaining dry ingredients and mix until combined.  Add the vanilla and mix another minute or so.

Now, here’s where you can sort of think ahead … 🙂

Split the dough into two and shape them into balls.  Refridgerate for about fifteen minutes before gettin’ busy … gives you fifteen minutes to tidy up and get organized before the next step .  🙂

Preheat your oven to 325 degrees and line your cookie sheet(s) with parchment paper.

Once the fifteen minutes is up, remove one ball of dough and roll it out on a flat surface.  You want to roll it fairly thin … maybe 1/4 of an inch.

Choose the cookie cutter of your choice and cookie cut away – you should get about 18 cookies with half of the dough.

Bake 12-15 minutes and voila!  Crispy little cookies that you and your kids will love!  Great with a cup of tea!

PS – wrap that second ball of dough and place it in the freezer if you don’t plan to use it within a couple of days.
