Apple, Yam & Coconut Soup!

This one is SO simple and so healthy … and it’s the perfect lunch for a rainy afternoon.

Roughly chop one onion, one apple and one yam.

Place all three together in a pot and drizzle a little bit (one or two tablespoons) of good olive oil over the top and let them mingle together for about ten minutes on medium heat.

Once they’ve carmelized just a little bit, add in one can of lite coconut milk, one cup of cold water, one teaspoon of each garam masala, turmeric and cinnamon … it’s starting to smell a bit like Christmas around here!  Place the lid on the pot and let it all simmer another ten minutes.

Remove the lid, turn off the heat and add a pinch of S&P.

Give it a bit of stir and let it stand for five minutes … puree this lovely soup with a hand blender and enjoy!  🙂

    I have made a similar soup in wintertime but didn’t add the apple: nice touch!
