Oh Yes, Caramel Sauce!

This is definitely a love/hate relationship!  It SO good, but so bad!  🙂

It’s a bit labour intensive, but it will be worth it.  Caramel sauce makes for a great culinary gift or just a special touch to a special dessert.

It’s best to have everything measured out and ready to go before you get started – it all happens so fast!  🙂

In a pot, on medium heat…

Pour in one cup of white sugar and whisk often … you don’t want the sugar to burn!

Once the sugar has fully melted and is golden in colour you want to remove the pot from the heat and immediately add six tablespoons of organic butter … keep whisking!   Be careful, it will sizzle and dance around a bit and it will be HOT!

Once the butter has completely melted, add in a half a cup of organic half and half cream (we use 10% MF cream instead of whipping cream … every little bit counts, right?!) and again, keep whisking.  Still HOT!

Return the pot to low heat and continue to whisk until everything is smooth and creamy.

(Optional: add in a pinch of sea or himalayan salt for salted caramel or a drizzle of vanilla paste for vanilla caramel!)

Take the pot off the heat and let it stand for about ten minutes before pouring it in to or on it’s final destination.  🙂

Note:  you will NOT want to do any finger taste tasting – it’s EXTREMELY hot!  It will be tough, but hold off until it’s room temperature.

Keep refridgerated and enjoy … in small amounts!  🙂
