Aromatic (GF & Vegan!) Pancakes…

Good morning!  🙂

It’s raining, it’s a long weekend and my son LOVES pancakes!

This combo is something new for us and luckily, it worked!  🙂

In a bowl…

  • 1.25c of GF all purpose flour
  • 1tsp of baking powder
  • 1tsp of ground cinnamon
  • pinch of ground clove
  • 1tbsp of hemp seeds
  • 1/4 of a banana – mashed
  • 1 wrinkly apple, skin removed – grated  (thanks jamie oliver!  LOVE him!)
  • zest of 1 small orange
  • flax egg (1 heaping teaspoon of ground flax mix with 3 teaspoons of water – soak for 5 minutes before adding)
  • 1c of soy milk

Mix all of the above (in that order) … using a small ladle, pour little scoops of the pancake batter into a pre-heated (medium heat) pan with melted coconut oil swimming about.  Once you pour your batter into your pre-heated pan you’ll want to turn the heat down just a little.  The pancakes will need approximately 3 or 4 minutes a side… maybe a bit longer or a bit less depending on the pan and the heat.

No matter what I do, the second batch is always better!  🙂

Try drizzling a small amount of orange and cinnamon maple syrup!

In a saucepan…

  • 1/4c of maple syrup
  • 1 cinnamon stick
  • top of 1 orange – squeeze the juice in and let the peel bathe with the mixture

Heat on low heat until ready to use … store what’s left in a mason jar and keep refridgerated until the next pancake morning!
