Tofu Pesto Pizza!

Normally I would bake this in the oven, but tonight a pan felt easier.  🙂

For two of us, I used a 175g package of firm tofu and sliced it into 4 squares.

I placed the squares in a pan on low-medium heat … ideally you want them to dry out a little before putting your pesto on.  The first side will need about 5-7 minutes … lift them out onto a plate and brush the pan with a little bit of good olive oil.  Put the tofu back in the pan, second side down.  🙂  Spread a tablespoon of ‘another yummy pesto’ over the tofu and top with a grated cheese of your choice.

We would typically use Daiya cheese with something like this but this evening we had a little bit of (local) smoked cheddar left over that needed to be used up (and it was delish!). Keeping the pan on low heat, cover it up and let the tofu pizzas simmer away until all the cheese has melted.

Serve with a nice green salad and enjoy!  YUM!
