One More Yummy Pesto!

I think this will inspire what’s for dinner this eve (perhaps baked tofu?) … stay tuned!  🙂

You can really make a pesto out of just about anything … we love kale and like to use it as often as possible.

This is a great, nutritious way to add wonderful flavour to just about anything!

In a food processor…

  • 1c of kale (stems removed)
  • 1/2 of a red pepper
  • 2 or 3 cloves of garlic
  • 1/4c of hemp seeds
  • 1/4c of pistachios
  • 3tbsp of good olive oil
  • pinch of salt

Process all of the above until smooth … you must, of course, taste before serving.  🙂

A tablespoon of this with a half a cup of quinoa???  Ah, YUM!
