Leeks & Lentils…

Sometimes all you need are the basics.  🙂

We use red lentils for many, many things … but this, hands down, is my favorite.  And it’s SO simple!

I didn’t meal plan today so these perfect little things did not get to soak for too long … maybe fifteen minutes.

Drain the soaking water from the two cups of lentils and rinse a few more times. Chop up one large leek (or two small) into small pieces and throw them in the pot… cover the pair with about six cups of water and bring it all to a boil.

Then, turn down to low heat, cover and let them cook for about twenty minutes … check halfway through in case you need to add a bit more water … we like our soup on the thicker side.

Add in S&P to your liking and serve!  Maybe with a little grated carrot and beet salad?

Simple, HEALTHY dinner that takes no time at all … and there will be leftovers for lunch tomorrow!  HAPPY thought!

  1. So simple, and yet a great idea! I’ve been wondering what to do with my bag of lentils (and bag of frozen leeks, actually). I will try this!
