Edamame & Friends (Hummus or Spread)

I have been meaning to do this for weeks………  but every time I steam the edamame it never makes it to the food processor!  🙂

This little wondrous bean makes for such a great snack all on its own … and it’s packed with fiber and many other good things for your beautiful body.  I thought I’d try and mix a few other things in there … just for fun.

In a food processor…

  • 1c of steamed edamame (just the bean!)
  • juice of 1 lemon
  • 2tbsp flax seed oil
  • 1tbsp of hemp seeps
  • 1tbsp of pumpkin seed protein powder (or seeds)
  • 1tbsp of red star nutrional yeast
  • 1tsp miso paste (thanks AC!)
  • 1 clove of garlic
  • pinch of pepper (no salt needed – plenty in the miso paste)

Process all of the above until smooth.

You could eat this right off the fork or you could use it on toast or in a sandwich wrap or with veggies (carrots & celery & cucumber!) … or you could just eat it right off the fork.  🙂
