Tofu Flax Cashew mmm…Mayo – maybe?

I love hummus and nut or seed butters… and mayo can come in handy for so many things… so I decided to play around a little bit.

This is what I came up with.  🙂

In a food processor…

  • 1/2c of cashews (I liked the idea of cashews because they’re one of the ‘creamier’ nuts)
  • 1 375g package of firm organic tofu
  • 1/4c of soy milk (or almond)
  • 1 heaping tablespoon of ground flax seeds
  • juice of two lovely lemons
  • a pinch of S&P
  • you could also add a pinch of your favorite spice … cumin, smoked paprika, basil?

Process the works until completely smooth … and voila!

This will make close to a cup … use it on everything!

We occasionally splurge and buy a beautiful, local GF bread and this … concoction would be fantastic spread on a thin slice of fresh bread with a tomato slice or two on top!!
