The Perfect Brunch… :)

Of course when I say ‘perfect’, it is solely based on my opinion…  🙂

We don’t eat eggs or salmon very often, so when we do I like to make it a special occasion.

We served a Mother’s Day brunch today for some very special ladies and this, served with a little spinach salad (with yogurt/dill dressing), was the main and middle course of three… YUM!

A day ahead…

Bake one potato per person.  Rub a little bit of olive oil over the skin and sprinkle a pinch of sea salt…give them a few breathly holes (with a knife) and pop them in a 350 degree oven until they are done.  Cool completely, cover and refridgerate until ready to use.

The special day…

Cut the tops of of your potatoes and scoop out all of the inside (save this for another dish!) – leaving a fairly thin wall but thick enough so that nothing will leak out.  Place your potato bowls in a baking dish and start filling!  On the inside, line the bottom with a generous piece of smoked salmon (lox), scatter a few mashed capers, a few small slices of red onion and a little bit of your favorite grated cheese.  Put these in a 250 degree over for about 15 minutes, remove the bowls and add one organic (local!) egg to each.  Place back in the oven – turning it up t0 375 – and let the eggs cooks for about 10-12 minutes… or until your whites are done (you’ll know by giving them a gentle poke).  Remove these beauties from the oven and sprinkle a little more of your favorite grated cheese over half, leaving some of the yolk exposed.  A pinch of freshly cracked black pepper and some chopped chives and brunch is served!
