Quinoa Veggie Soup

Perfect meal on a rainy day!

Chopped all of these veggies (and more if you wish!) and add to a large pot…

  • 1 onion
  • 1 red pepper
  • 1 zucchini
  • 1 small head of cauliflower
  • 10-12 mushrooms
  • a big handful of kale (stems removed)
  • 3 cloves of garlic

Drizzle a little olive oil over everything and let them sizzle for about ten minutes.

Add six cups of water to the pot, bring to a boil and then let it simmer for another ten minutes.

Add in 1.5 cups of (rinsed) quinoa, give it a good stir and cover for ten more minutes.

Remove the lid, give it a stir and add water as needed (depending on how ‘soupy’ you like your soup).

Lunch is on!  🙂
