Mediterranean Pasta Salad (GF!)

Here’s simple, tasty and healthy meal… great for a spring/summer eve!


Boil enough water for about one cup of organic brown rice penne noodles….drop them in the pot and let simmer for approximately seven minutes.  Once they are almost done, turn off the heat and let them just hang out while you are preparing the ‘sauce’ (takes less than 10 minutes!).

Chopped all of the ingredients below and mix together in a bowl…

  • 1 can of artichoke hearts – discard water (we use canned artichokes to avoid the extra oil)
  • 12 olives – black and green
  • 2tbsp of sundried tomatoes (soak them in water for about an hour before chopping)
  • 1 roasted red pepper
  • 2 fresh roma tomatoes
  • 2 cloves of garlic
  • 1tsp capers
  • 1tsp each fresh basil and oregano
  • 1/4c feta cheese (optional)
  • a pinch of cracked black pepper

Stain your rice noodles and add them to the bowl of goodness – toss together and serve on a bed of arugula.

Top with a little bit of parmesan if you like… and there you have it!  🙂
