Veggie Burger…Hold The Bun

Who needs a bun!

What you’ll need…

  • 1c cooked beans (chickpeas, pinto, black beans or a mixture)
  • 2c cooked quinoa
  • 1/2c raw/natural almonds
  • 1/2c of gf flour or spelt flour
  • 1/2c of (gf) oats
  • 1 chia egg (soak 1tbsp of chia seeds in 3tbsp of water)
  • 2 pieces of celery
  • 1/2 an onion
  • 1tbsp of miso paste
  • pinch of pepper

Process all of the ingredients in your food processor until fully combined.

The mixture will be a little on the wet side, but don’t worry it all works out in the end.  Shape approximately six patties and place them on a parchment lined baking sheet and bake them in a moderate oven (350) for about forty five minutes.

We serve these on a a lightly dressed kale salad with a slice of tomato and mango salsa on top………………

Mango salsa you say?

Chopped the following into small cubes…

  • 1/2c of ripe mango
  • 1/2c of cucumber
  • 1tbsp of red onion
  • a slice of tomato (just for colour)

Then add…

  • a good pinch of chopped cilantro
  • a squeeze of fresh lime juice
  • dash of S&P

And voila!
