Parsley Pesto Paste

I often find I have a fair amount of parsley left over…

I always buy it with the intention of using it all because it’s SO good for us but it always ends up getting overlooked.

Not this time!  🙂

In the food processor…

  • 1c of flat leaf parsley
  • 1/4c walnuts
  • 1/4c hemp hearts
  • 1 or 2 gloves of garlic (if it were just for me, I’d use 4!)
  • 3tbsps good olive oil – to start
  • 1/2tsp sea or himalayan salt

Process all of the above together for about thirty seconds and there you have it………………

Pesto Paste!

This is so good on a slice of firm tofu!  Or just on a spoon…  🙂

If you prefer it a little more ‘saucy’, add another tablespoon or two of the oil.
