Quinoa Stuffed Peppers……..

Note that this photo was taken prior to cooking…

I had some odds n’ sods in the fridge that I wanted to use and this is what we came up with.

Saute (for 10ish minutes) …

  • 1 onion
  • 1c finely chopped broccoli
  • 10 finely chopped mushrooms
  • 4 cloves of garlic

Turn off the heat, let stand for 15 minutes (in the pan) and then stir in…

  • 1c cooked quinoa
  • 1c cottage cheese (we use 1% organic cc)
  • 2tbsp chopped parsley
  • S&P to taste

Cut your peppers in half and stuff ’em full!  🙂

Because there are only two of us, I stuffed two halves and spread the remainder of the filling on the bottom of the baking dish and will bake the pepper bowls on top of it …quinoa, cheesy goodness – YUM!

Bake these in a moderate oven for approximately 3o minutes and dinner is done!

A little (red star) nutrional yeast sprinkled on top would add some extra, fantastic flavour….  🙂
