Quinoa Borscht…………..

I could eat this soup for breakfast!!!  🙂

If I have the time I chopped all of the veggies roughly the same size and serve this soup rustic style….if time is not on my side, I chop away and puree it all together when it’s all said and done.

Start with…

  • 2 beets
  • 2 carrots
  • 2 purple potatoes
  • 2 onions
  • 1/2 head of purple cabbage

Drizzle about 3tbsp of good, healthy oil over the veggies once they’re in the (large) pot…….let them mingle and meld together for about 20 minutes on medium heat.

Then add…

  • 4 diced tomatoes (or 1 can will work)
  • 4-6c of waters
  • juice of 1 lemon
  • 1tsp of S & P

Bring this all to a boil and then turn down to a simmer for another 20 minutes …with the lid on.

Shortly before you serve, stir in a good handful of chopped dill and 1 heaping cup of cooked quinoa…  🙂

I like to add a big scoop of (0%) plain yogurt on the top to add a creamy texture.
