EASY Lentil Soup………….

It does not get any easier than this one!

I chopped up 1 onion, 1 leek, 2 yams (or sweet potatoes) and 1/2 head of cauliflower….I soaked 2c of red lentils (in the soup pot – makes for less dishes!) for a couple of hours and then rinsed them 3 or 4 times…..added approximately 6c of water to the pot and all of the chopped veggies………brought it all to a boil, added 1tsp tumeric, salt and pepper and then let it simmer for 30 minutes……I stirred in 1/2c of flat leaf parsley just before serving…….  DONE!  🙂
