Kale Cabbage Carrot Salad

Simple and absolutely delicious!

My four year old requests this colourful collection of veggies about once a week ….he loves it.

We found a beautiful salad similar to this one at a local health food store and just made our own version of it.  🙂

In the food processor, grate the following:

  • 1 head of red cabbage
  • 6 carrots
  • 2 beets

On the cutting board:

  • 1 bunch of kale leaves (stems removed)
  • 1 bunch of watercress (optional but so good for you)

Chop the kale and the watercress and add to a bowl with the grated goodness – toss about.

For the dressing:

  • 1/4c of flaxseed oil
  • 1/4c of braggs
  • 1/4c of balsamic vinegar
  • 1 clove of garlic, grated
  • juice from half a lemon


Place the dressing ingredients into a mason jar and give it a really good shake… makes four to six servings.

Pour the desired amount of dressing over the top of your salad and sprinkle it with a few toasted sunflower or pumpkin seeds… or both!
