Chickpeas and Veggies… Mingle

This one is SOOO easy!

I chopped up 1 onion, 4 pcs of celery, 2 yams, 1 zucchini and 4 cloves of garlic.

I put them in the pot on medium heat and drizzled olive oil over them.

While they were bathing in the pot……

I put 1 cup of chickpeas (that had soaked for two days) in a pot of boiling water – after it boiled I took it down to a simmer for 30 minutes.  Drained the chickpeas and removed some of the skins ( makes for a smoother, creamier chickpea!) and added them to the pot of veggies.

I then diced up 3 tomatoes and added them with 2 cups of water………voila!

S & P to taste and you have lunch for 3 days!!  🙂
