Super simple, super scrumtious…. SO, SO good for you!
All you need…
- 1 leek
- 2 cloves of garlic
- 2 pieces of celery
- 1 yam or sweet potato
- 3-4c of mushrooms (a mixture of your favorites)
Roughly chop all of the above and throw them into a pan with a bit of coconut oil on medium heat.
Let them sizzle for 10-15 mintues and add in a dash of tumeric and a pinch of thyme (fresh is best!).
Pour in 4-6 cups of water…depending on how thick you like your soup.
Puree with a hand blender until smoothish.
Chop a handful of fresh parsley and add to the soup just be serving…………. S&P to taste.
